Eggs are a versatile food that can be served for any meal of the day. I like omelets, and every once in a while I will use the leftover stuff in my fridge to make a meal with. Breakfast for supper is a favorite at my house. This is especially true when it is a ways from payday. If you like omelets, you will love this one.

Western omelet recipe:

¼ of an onion chopped

½ of a green pepper chopped

3 eggs to make one omelet

A splash of milk

A splash of olive oil

1 slice of sandwich ham diced up

2 slices of American cheese

How to make my western omelet:

Step 1.. Place an omelet pan on the eye of the stove and let it start heating up.

Step 2.. Next, add a splash of oil into the pan. The pan should be hot when you add the chopped onion and pepper. They should start sizzling when the veggies hit the pan.

Step 3. While the veggies are sautéing in the pan, crack 3 eggs and put them one at a time into a bowl. It’s good to use a saucer to crack each egg into, to make sure that each egg is good. Sometimes an egg will have blood in it, which won’t hurt us or the egg, but most of us would prefer perfect eggs in our omelet.

Step 4. Next, add a splash of milk into the egg and beat the eggs with a fork or wire whisk until the mixture is well blended. I like to beat my eggs with 80 strokes. The eggs are perfectly blended after 80 strokes.

Step 5. Turn the heat off the veggies when they are partially cooked. The onions and peppers should be soft and the onions should be fairly clear. It’s okay that the veggies have a little bit of brown on them from sautéing. Next, you will need to transfer the onions and peppers into the egg mixture.

Step 6. Now add the pieces of ham to the egg mixture and whisk the egg mixture one more time for a few strokes.

Step 7. Heat the same pan that you cooked the veggies in, and when the pan is good and hot, add the egg mixture. Let it cook on one side and then flip it to the other side. Now cover the top of it with American cheese and fold the omelet in half and turn off the heat.

Step 8. Remove the pan from the heat source and put a lid on the pan and let the omelet sit in the pan until you prepare the toast, juice and coffee. The omelet is ready to serve.
