Recipe for Broccoli and Rice Casserole

This article is a recipe for broccoli and rice casserole.

If you have ever had more month than you have money, you know that your pantry, freezer and refrigerator can get mighty empty before payday. There are times when I have to make do with the food that I have and try to make a meal from that. Today I made another winner just by throwing some things together to make a casserole with.

I didn’t stress about making a casserole, because I have done it many times before when my food was low. I usually put eggs in my casseroles to help bind them together and give them that rich taste that we like so much at our house. I didn’t even have an egg in the house and no money to buy any just yet, but I did have some saltine crackers to use as a binder, and that worked out just fine.

Things I had to make a casserole with:

2 boxes of On the Side Rice and Broccoli mix

1 bag of broccoli


Shredded cheddar cheese

½ sleeve of saltine crackers

Here is How to make my recipe for broccoli and rice casserole:

Step 1. Prepare two boxes of On the Side Rice and Broccoli mix as directed on the box - I added a little extra water to it.

Step 2. Then I added the broccoli and let it simmer on very low heat for about 35 minutes so that the broccoli would get tender.

Step 3. Then add ¾ cup of shredded cheddar cheese and stirred that in.

Step 4. Add crushed saltine crackers to use as a binder in the casserole and mixed it well.

Step 5. Grease a casserole dish - I used PAM spray.

Step 6. Spoon the broccoli rice mixture into the casserole dish.

Step 7. Top the casserole with about a cup of shredded cheddar cheese. (I didn’t measure the cheese; I just sprinkled on enough of the cheese to completely cover the top of the casserole very well.) That cheese will form a cheesy crust on the dish that tastes so good.

Step 8. Bake for 35 to 40 minutes in a 350 degree oven, so that the cheese was browned and bubbling on top.When it is done, take it out of the oven and let it rest before serving.

When the casserole was done, I took it out to rest for about 10 minutes before cutting into it. It was perfect! The texture and the taste were just right; not too spicy and not bland. My family isn’t into a lot of spice, so I have to think about them when I prepare meals. I added a liberal amount of Louisiana hot sauce to mine and I was in heaven.

I love casseroles in general and Broccoli and Rice by itself too. I like to cook the rice, just the rice with salt, water, garlic and onions. Later I get the broccoli, leave it for about 2 min in the microwave, fry it (like an eeg) with olive oil and put a little bit of shoyu on top after all. it is also very nice.

Another one that I must try soon.
