Blueberry Cake Recipe

This article features my blueberry cake recipe.

Blueberries are filled with antioxidants; they are good to have by themselves, on cereal, in ice cream and in recipes. I use sugar in this recipe, but you can substitute it with Splenda if you want to cut down on your sugar intake. This blueberry cake recipe is a healthy treat to have on hand for dessert and for a breakfast treat. My mom used to make this when I was younger. Sometimes she used peaches or whatever fruits she had at the time.

What you need to make this recipe for blueberry cake:

1 cup of self-rising flour

1 teaspoon of baking powder

1 box of yellow or white cake mix

1 cup of sugar (may substitute with Splenda)

3 eggs

1 stick of butter (may use margarine if you like)

1 and ½ cups of water

2 teaspoons of vanilla extract

1 cup of blueberries

How to make this blueberry cake recipe:

Step 1. Preheat your oven to 350 degrees.

Step 2. Cream together the eggs, sugar and butter in a large mixing bowl.

Step 3. Add the dry ingredients and the other wet ingredients to the mixing bowl and mix well. You can use a mixer or a wire whisk.

Step 4. Gently fold in the blueberries.

Step 5. Transfer the cake batter into a greased and floured oblong pan to keep the cake from sticking to the pan. You can use Baker’s Joy, if you prefer.

Step 6. Bake the cake at 350 degrees for 35 to 40 minutes or until done. The cake should spring back when lightly pressed with your fingers. If you prefer to use a toothpick, it should come out clean when the cake is done.

How to make the frosting

What you need:

8 ounces of cream cheese

8 ounces of Cool Whip

1 teaspoon of vanilla extract

1 cup of confectioner’s sugar

1 can of blueberry pie filling

Mix the cream cheese, cool whip, vanilla extract and sugar together in a medium sized bowl. Frost the blueberry cake when it has cooled sufficiently. Once you frost the cake, open the can of blueberry pie filling and spread it over the top of the frosting. If you prefer the blueberries to be sugar free, you can buy sugar free pie filling. If you prefer to use fresh or frozen blueberries in this recipe, you can cook them down with Splenda or some other artificial sweetener that can be used like sugar. This is an easy recipe to follow.
